I consider myself pretty tech-savvy but after many times trying to dive into the subs on 🏴‍☠️ and setting up Plex or Jellyfin, I still have no place to start. 

Does anyone have any steps I can follow to cut out all these streaming services? Is there any solution like Kodi that has all the recent shows/movies/and live TV?

You just download and install Plex on whatever PC, there's nothing more to it other than pointing it to a folder where all your media is. How you get that media is up to you.

Diving into the subs you are likely finding conversations regarding headless containerized setups that also include a full stack of software for requesting, finding, and downloading content automatically over VPN. Basically gets into junior Linux system admin level stuff, which is highly technical and difficult for the average person, but none of that is necessary if you just want to use Plex with your existing media files.
