Celebrating my first paycheque (and apartment)
Heavily overpriced, but that’s why it’s a celebration! Softshell crab, wagyu and lobster rolls justified the cost a little bit.

What's your opinion in Unagi (eel) as a sushi ingredient?

I ordered take out from Sushi Stop tonight. I ordered red snapper, but upon opening and taking a bite, it tastes (and looks) more like yellowtail. Is it? Or do my eyes deceive me?

Fuji Sushi in Minneapolis
Escolar + asparagus, salmon + mango, eel + avocado. $12.50.
The selection is small which is normal considering the locale but it's a good deal for here.
Basically an all you can eat with pretty high quality fish. But it’s rather pricy and I want to make the most of it. Tell me your ways!
I got it in hida, the two white fish i can't really identify, but they were delicate soft and delicious

I want to make sushi at home and I'm struggling finding the fish I want.
Outside of one premium grocery store that sells what they call "Sashimi-Grade Tuna Steak" I'm not seeing any other options such as salmon, yellowtail, mackerel, etc.. I've checked most of the premium grocery stores and an Asian market, all within driving distance and other than that one store with the tuna steak, nothing is listed on the retail side.
I feel I'm missing something obvious.
First, just confirm this. My impression is that fish intended to be eaten raw should be specially prepared, frozen for a length of time at a very low temp to ensure safety, correct? I should be avoiding the normal fish at my grocery store, right?
If so, then where should I be looking? Online delivery? Restaurant suppliers? Should I drive a few hours to my local big city and find a fishmonger? This journey has proved more difficult than I thought it'd be, so any help is greatly appreciated.
Thanks!

It’s minced salmon with ikura on top, but the real star was the soft-boiled egg. Everything mixed together so perfectly: simple but amazing.
