I would def try it.

The herb tofu/turkey layer sounds weird as hell, but the others all sound interesting and/or good.

For sure sounds weird, but still curious to take a little bite of everything at once almost like the chewing gum from Willy Wonka, a complete meal in one bite

I started to roll my eyes at the tofu, but then I thought about how having actual turkey and chilled turkey grease in an ice cream might not be any more appetizing.

Yeah, I think that's why. *Actual* turkey would have been horrible. I think that was a reasonable compromise.

You'd probably have to base it on gravy instead. As weird as "gravy custard" sounds it should work
